Soak your cashews overnight or at least 2 hours prior to starting this recipe.
20-30 balls depending how big you roll them
2 Cups cashews
1 Cup desiccated coconut
2 Tbs raw cacao
8 medool dates (soaked in hot water for 10 minutes)
1 scoop chocolate protein powder (optional, still works without it)
1 cup powdered oats (optional, if you add this is will not be gluten free)
Drain and rinse your soaked cashews.
Blitz cashews and coconut in food processor until finely chopped.
Add cacao and dates and process until a dough consistency forms.
If you're adding protein or oats, add in and process until combined.
Roll into walnut sized balls and roll in desiccated coconut, or crushed pistachios.
Store in a container in the fridge for as long as a week.
You could freeze these if you don't think they will disappear in a week!
