This delicious recipe is super easy to prep the night before and just heat to serve.
1 Cup Steel Cut Oats
1 Tbs Olive Oil
1 Cup Filtered Water
1 Cup Coconut, Oat, Soy Milk, of your choice
1 Tsp Cinnamon
Pinch of Vanilla Bean Powder
Toasted Slivered Almonds, Coconut and Berries to Serve
Put the oats and olive oil in a heavy based pot, turn on heat and lightly toast the oats to give them a yummy flavor.
Add in the water and milk, bring to the boil.
As soon as the liquid boils, turn off the heat and put the lid on the pot.
You can let this sit overnight, or just 20-30 minutes also does the trick.
Add in cinnamon and vanilla bean powder, at this stage I also add Flax Seed Oil and a dash of Maple Syrup, but this is optional.
Serve into 4 containers or jars, top with toasted nuts and coconut.
After warming to eat the next day, you can also add a handful of berries and / or a dollop of yoghurt.
