Miso Marinated Tofu Burgers

Make the marinade and add the tofu or meat, leave to sit covered for at least 2 hours before cooking.

10 minutes

Yields

Enough to marinate a big block of tofu or a couple of chicken fillets

Ingredients

For the marinade:

Block of firm, organic tofu

1 tbs fermented miso paste

2 cloves crushed garlic (I used my fermented garlic in honey and added a drizzle of the honey in too)

1 ts toasted sesame oil

Juice of a lime

2 tbs tamari (GF) or soy sauce alternative

1/2 inch piece of fresh ginger, grated

1 small red chilli, finely chopped

Enough warm water to dissolve the miso and make a thinner paste, I used about 1/4 Cup

For the burgers:

Burger bun of your choice

Cherry tomatoes, sliced

Fresh rocket

Wasabi mayonnaise (I mixed wasabi paste and Kewpi together)

Sliced tasty (or vegan) cheese

BBQ'ed onions!!





Directions

Mix all marinade ingredients together in a bowl, add enough water to bulk it up then add your sliced tofu or meat.

Coat with marinade and then cover and pop in the fridge for a couple of hours.

When ready to eat, remove from the fridge, cook on pre-heated BBQ or pan, and build burger however you like it, drizzle a little marinade over your burger like a sauce!

I have listed the additional ingredients i used above but make it however you like...... definitely add some Kim Chi!!
