Pre-boil 2 oranges for this recipe, and let them cool to room temp.
Pre-heat your oven to 180 degrees.
12 muffins or 23 cm cake
2 whole, boiled oranges
1 ts GF baking powder
1 cup coconut sugar
2 cups almond meal
100 gm dark chocolate, chopped
Blitz the oranges in your food processor until finely chopped and liquid.
Add in eggs, baking powder, coconut sugar and almond meal, pulse to combine.
Add in chopped dark chocolate last, and fold through.
Pour into prepared muffin pans or a lined 23 cm cake tin.
Bake in a pre-heated oven at 180 degrees for 15- 20 minutes depending on your oven.
Cool on a rack and keep in a container for up to a week.
