Roast Pumpkin

1/2 Jap pumpkin

1-2 tbs olive oil

Sea salt

1 ts curry powder


Wash pumpkin well, if it's organic I leave the skin on, it's so delicious!

Cut into half moons, or whatever shapes you like. Place on a baking tray, drizzle with olive oil, sea salt and curry powder.

Place in a pre-heated oven at 180c degrees for about 30 minutes depending on your oven.

When cooked, you can stick a fork in it and it will slide out easily!


This is a weekly staple in my house, sometimes I add curry powder, but sometimes I don't. It's completely up to you!
