Allow 3-4 hours to freeze the slice before cutting up and dipping in chocolate!
40 bits, depending on the size you cut them
300g steamed & cooled cauliflower (that's a small head of Cauli)
200g raw cashews, soaked for at least 2 hrs then drained
200g medjool datess
Approx 300g Dark chocolate (for dipping) I used Coles 70%
1 tbs maca (optional)
2 tbs tahini
2 tbs rice malt syrup/maple syrup/honey/coconut nectar
2 scoops vanilla protein of your choice (I used True Protein)
Add the cauliflower, dates and cashews to your food processor and blitz until smooth.
Add all the remaining ingredients EXCEPT the chocolate and process until it forms a dough. If it's a bit runny you can add more protein powder a little at a time until you have a dough like consistency.
Press into a lined baking tray and pop in the freezer to "set" (2-3 hours)
Once its set you can melt your chocolate in a double boiler and then cut the slice up into bite size pieces, dipper in the melted chocolate and then return to the freezer to reset.
Keep in the freezer to maintain their shape, just be careful when getting them out to eat that you don't break your teeth, they will soften quite quickly though!
